Classic Biryani with Golchha Basmati Rice
Ingredients:
- 2 cups Golchha Basmati Rice
- 500 grams of chicken or vegetables (your choice)
- 2 onions, sliced
- 2 tomatoes, chopped
- 1/2 cup yogurt
- 4 tablespoons biryani masala
- Fresh coriander and mint leaves
- Whole spices (cardamom, cloves, cinnamon)
- Salt, to taste
- 4 cups water
Instructions:
- Soak Golchha Basmati Rice in water for 30 minutes, then drain.
- In a large pot, heat oil and fry the sliced onions until golden brown. Remove half for garnishing.
- Add the chopped tomatoes, yoghurt, and biryani masala to the pot. Cook until the oil separates.
- Stir in the chicken or vegetables, cooking until tender.
- Bring water to a boil in a separate pot, add the soaked rice, and cook until 70% done. Drain and layer over the cooked chicken or vegetables.
- Sprinkle the fried onions, fresh coriander, and mint leaves. Cover and cook on low heat for 20 minutes.
- Serve hot with raita or salad.
Coconut Rice with Golchha Sona Masoori Rice
Ingredients:
- 1 cup Golchha Sona Masoori Rice
- 1/2 cup grated coconut
- 2 green chillies, slit
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal
- A few curry leaves
- Salt, to taste
- 2 cups water
Instructions:
- Rinse and soak Golchha Sona Masoori Rice for 20 minutes, then drain.
- In a pan, heat oil and add mustard seeds, urad dal, green chillies, and curry leaves. Sauté until fragrant.
- Add the soaked rice and water to the pan. Season with salt.
- Cook on medium heat until the rice is done, about 15 minutes.
- Stir in the grated coconut and cook for an additional 2-3 minutes.
- Serve warm with a side of pickle or papadam.
Pulao with Golchha Long Grain Rice
Ingredients:
- 1 cup Golchha Long Grain Rice
- 1 cup mixed vegetables (peas, carrots, beans)
- 1 onion, sliced
- 2 tablespoons ghee or oil
- 1 teaspoon cumin seeds
- 1 bay leaf
- 2 cups water
- Salt, to taste
Instructions:
- Rinse Golchha Long Grain Rice and soak for 30 minutes, then drain.
- Heat ghee or oil in a pot, and add cumin seeds and bay leaf. Sauté until fragrant.
- Add sliced onions and sauté until golden brown.
- Stir in the mixed vegetables and sauté for a few minutes.
- Add the soaked rice and water, then season with salt.
- Bring to a boil, cover, and reduce heat. Cook for 15 minutes or until the rice is tender.
- Fluff with a fork and serve with raita or yoghurt.
Risotto with Golchha Arborio Rice
Ingredients:
- 1 cup Golchha Arborio Rice
- 4 cups vegetable or chicken broth
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup white wine (optional)
- 1 cup mushrooms, sliced
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
- Fresh parsley for garnish
Instructions:
- In a saucepan, heat the broth and keep it warm.
- Heat oil and sauté onions and garlic in a separate pan until soft.
- Add mushrooms and cook until tender.
- Stir in Golchha Arborio Rice and cook for 2 minutes.
- If using, pour in white wine and let it absorb.
- Gradually add the warm broth, one ladle at a time, stirring continuously until the rice is creamy and al dente.
- Stir in Parmesan cheese and season with salt and pepper. Garnish with fresh parsley before serving.
